Whole Grain Pepper Barbecue Pasta Salad

Pasta salad filled with crunch and tang from the combination of fresh bell peppers with ranch and barbecue sauces.

Serves 4

Ingredients
  • 13.25 ounces Mueller's Whole Wheat Rotini
  • 1 cup yellow onion, diced
  • 1 cup green bell peppers, diced
  • 1 cup red bell peppers, diced
  • 12 ounces BBQ ham, beef or chicken, diced
  • 1-1/2 cups ranch dressing
  • 1-1/3 cups BBQ sauce
  • 1/3 cup Parmesan cheese, grated
  • 1/4 cup scallions, minced
  • Salt and pepper to taste
Directions
  1. Cook pasta according to package directions.
  2. Rinse pasta with cold water until cool to the touch. Drain again well.
  3. Put pasta in large mixing bowl, add onions, pepper and meat and toss. Mix in all remaining ingredients and blend well.
  4. Chill, sprinkle with scallions and serve. Season to taste with salt and pepper.
