Whole Wheat Harvest Salad

This pasta recipe harvests the tastes of summer with strawberries, tomatoes and pine nuts.



Mueller's Whole Wheat Penne

Serves 4

Ingredients
  • 13.25 ounces Mueller's Whole Wheat Penne
  • 4 cups mesculin salad mix
  • 3/4 cup red or Vidalia onion, very thinly sliced
  • 2 cups ripe tomatoes, diced
  • 2 cups strawberries, quartered
  • 1/2 cup toasted pine nuts
  • 2/3 cup balsamic vinaigrette
  • 1/4 cup grated Parmesan cheese
  • Salt and ground pepper to taste
Directions
  1. Cook pasta according to package directions.
  2. When pasta is “al dente,” drain in colander.
  3. Put salad mix in large mixing bowl.
  4. Pour hot, well-drained pasta over salad mix. Sprinkle onions, tomatoes, strawberries and pine nuts on top of pasta. Season with salt and pepper. Add olive oil, balsamic vinaigrette and Parmesan cheese.
  5. Toss all ingredients well. Serve immediately.
