Whole Wheat Harvest Salad
This pasta recipe harvests the tastes of summer with strawberries, tomatoes and pine nuts.

Ingredients
- 13.25 ounces Mueller's Whole Wheat Penne
- 4 cups mesculin salad mix
- 3/4 cup red or Vidalia onion, very thinly sliced
- 2 cups ripe tomatoes, diced
- 2 cups strawberries, quartered
- 1/2 cup toasted pine nuts
- 2/3 cup balsamic vinaigrette
- 1/4 cup grated Parmesan cheese
- Salt and ground pepper to taste
Directions
- Cook pasta according to package directions.
- When pasta is “al dente,” drain in colander.
- Put salad mix in large mixing bowl.
- Pour hot, well-drained pasta over salad mix. Sprinkle onions, tomatoes, strawberries and pine nuts on top of pasta. Season with salt and pepper. Add olive oil, balsamic vinaigrette and Parmesan cheese.
- Toss all ingredients well. Serve immediately.
