Angel Hair Pasta with Mushrooms, Pesto & Plum Tomatoes
This light and easy dish combines tomato sauce, pesto and mushrooms with Mueller's Angel Hair pasta to make a delightful dish for dinner.

Ingredients
- 8 ounces Mueller's Angel Hair
- 3 tablespoons pine nuts
- 3 tablespoons olive oil, divided
- 4 ounces mushrooms, sliced
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 3 ripe plum tomatoes, sliced
- 8 ounces pesto (store bought or homemade)
- Parmesan cheese, grated (optional)
Directions
- Cook pasta according to package directions. Lightly toast pine nuts.
- Heat 2 tablespoons of olive oil in medium skillet. Add mushrooms, dried basil and salt and pepper. Cook 3 minutes.
- Add tomatoes. Cook and gently stir 30 seconds. Drizzle with last tablespoon of olive oil and remove from heat.
- Toss pasta with pesto.
- Add mushroom and tomato mixture to pasta mixture. Toss again.
- Season to taste with salt and pepper. Garnish with toasted pine nuts and grated Parmesan, if desired.
