Chicken Artichoke Pasta Medley
A colorful, savory dish with Mueller's Bowtie pasta. A medley of vegetables and chicken make this recipe perfect for entertaining friends.

Ingredients
- 6 ounces Mueller's Bowtie pasta
- 2 tablespoons olive oil
- 2 cups broccoli florets
- 1-1/2 cups sliced mushrooms
- 1 cup red bell pepper strips
- 1 clove garlic, minced
- 4 skinless, boneless chicken halves, cut into thin strips
- 1 (6 ounce) jar marinated artichoke hearts, undrained and quartered
- 1 teaspoon dried basil
- 1/4 cup grated Parmesan cheese
Directions
- Cook and drain according to package directions.
- While pasta is cooking, heat large skillet. Add 1 tablespoon oil. Add broccoli, mushrooms, red pepper and garlic. Cook and stir vegetables over medium-high heat for 2 minutes, or until crisp-tender. Remove from skillet. Add chicken to remaining oil. Cook and stir 3 to 4 minutes or until tender. Add artichokes, basil and cooked vegetables.
- Bring to a boil. Reduce heat. Simmer 1 minute.
- Serve over prepared pasta. Sprinkle with cheese.
