Chicken Mushroom Penne in Dijon Cream Sauce

A French-inspired classic with an easy, quick-to-make sauce of cream and Dijon mustard.

Serves 4

Ingredients
  • 13.25 ounces Mueller's Whole Wheat Penne
  • 2 boneless, skinless, chicken breast, diced into 1/2 inch pieces
  • 1/3 cup white wine or chicken stock
  • 1/3 cup olive oil
  • 1 cup mushrooms, sliced thin
  • 2-1/2 cups heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon green onions, diced
Directions
    1. Cook pasta according to package directions.
    2. Heat oil in the sauté pan until it smokes. Quickly add the chicken and brown on both sides.
    3. Add mushrooms. Sauté for 1 minute.
    4. Deglaze with wine and reduce heat by half.
    5. Add cream and mustard, cooking until the sauce is slightly thickened.
    6. Toss in pasta until hot. Garnish with green onions. Serve immediately.
