Everyday Asian Pasta

Ingredients
- 16 oz Mueller's Spaghetti
- 2 Tbsp vegetable oil
- 1 lb boneless, skinless chicken breasts, cut into bit-size pieces
- 3 cloves garlic, minced
- 1 Tbsp minced fresh ginger
- 3 cups broccoli florets
- 1 cup snow peas, trimmed
- 2 carrots, thinly sliced
- 1 cup chicken broth
- 1/3 cup soy sauce
- 2 Tbsp rice vinegar
- 1/4 tsp crushed red pepper flakes
- 1 Tbsp cornstarch
Directions
- Cook pasta according to package directions; drain.
- Heat oil in a large skillet over medium-high heat. Add chicken and cook, stirring frequently, until chicken is lightly browned. Add garlic and ginger and cook, stirring frequently about 30 seconds. Add broccoli, snow peas and carrots, and cook, stirring frequently, 4 to 5 minutes or until vegetables are crisp-tender and chicken is fully-cooked.
- Combine broth, soy sauce, rice vinegar, red pepper flakes and cornstarch; pour broth mixture into chicken and vegetables in skillet. Cook, stirring constantly, until mixture bubbles and is slightly thickened.
- Place cooked pasta in a large serving bowl. Pour chicken and vegetables over spaghetti; toss to combine.
- If desired, substitute 4 cups of favorite prepared, trimmed or sliced vegetables for broccoli and snow peas. Suggestions include celery, onion, zucchini or yellow squash, mushrooms, red or green bell peppers or other favorites. Use 4 cups of one vegetable or any combination of vegetables that equal 4 cups. For example, substitute 2 cups sliced zucchini, 1 cup sliced celery and 1 cup sliced mushrooms for broccoli and snow peas.
