Fiesta Tri-Color Rotini Salad
Your plates will pop with color when you add this bright and tasty salad. Serve it warm, or chill it on a hot day.

Ingredients
- 12oz Mueller's Tri-Color Rotini
- 2 medium tomatoes, chopped
- 1 large cucumber, not peeled, halved lengthwise, seeded and thinly sliced
- 2 stalks celery, sliced
- 1 cup chunky salsa
- 1/2 cup red wine vinaigrette
Directions
- Cook pasta according to package directions; drain. Rinse with cold water and place in a large salad bowl.
- Add tomatoes, cucumbers and celery.
- Mix together salsa and red wine vinaigrette. Pour dressing over pasta and vegetables; toss to coat well. Serve immediately, or cover and refrigerate until chilled.
- Add 2 green onions, chopped or sprinkle with 2 tablespoons minced fresh cilantro, if desired. Choose mild, medium or hot salsa, as you desire, or season to taste with a few drops of hot pepper sauce. To easily seed the cucumbers, slice the cucumbers in half, lengthwise. Using a teaspoon, gently scrape out and discard seeds.
