Italian Sausage with Penne and Peppers

Ingredients

  • 16 oz Mueller's Penne Pasta
  • 1 Tbsp olive oil
  • 1 lb (about 4 links) Italian sausage links, cut into 1-inch pieces
  • 1 large onion, sliced
  • 1 medium green bell pepper, cut into 1/2-inch strips
  • 1 medium red bell pepper, cut into 1/2-inch strips
  • 1 can (14.5 oz.) diced tomatoes with basil, oregano and garlic
  • 1 Tbsp brown sugar
  • 2 Tbsp red wine vinegar
  • 1 tsp dried basil
  • 1/2 cup shredded Italian blend cheese

Directions

  1. Cook pasta according to package directions; drain.
  2. Heat olive oil in a medium skillet over medium-high heat. Add Italian sausage pieces and cook until browned, turning frequently.
  3. Add onion and peppers to skillet; stir. Add tomatoes, brown sugar, red wine vinegar and basil. Cover and bring mixture to a boil; reduce heat and simmer 7 to 10 minutes, stirring occasionally.
  4. Add penne to skillet and toss gently to combine ingredients.
  5. Sprinkle with 1/2 cup shredded Italian blend cheese.
