Shrimp and Asparagus Pasta with Lemon Ginger Sauce

Shrimp and pasta are a perfect marriage in this meal. The tangy sweetness of lemon complements the shrimp and adds a flavorful zip to the asparagus.

Ingredients

  • 8 ounces Mueller's Angel Hair
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 ounces fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 pound shrimp, peeled and deveined
  • 1 cup chicken broth
  • 1/2 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cornstarch

 

Directions

  1. Cook pasta according to package directions.
  2. Heat olive oil in large skillet over medium heat. Add garlic and asparagus; cook and stir 2 to 3 minutes. Add shrimp; cook and stir 2 to 3 minutes or until pink.
  3. Combine chicken broth, lemon peel, lemon juice, ginger and cornstarch; add to skillet. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. 
  4. Toss with Angel Hair.
