Smoked Turkey and Broccoli Pasta

Ingredients
- 16 oz Mueller's Ruffles Pasta
- 2 Tbsp olive oil
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 3/4 lb smoked turkey, cut into 3/4-inch cubes
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 1/4 cup heavy or whipping cream
- 3/4 cup shredded Parmesan cheese
- Salt and pepper, to taste
Directions
- Cook pasta according to package directions; drain, reserving 1/2 cup pasta water.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and garlic and cook, stirring frequently, 3 to 4 minutes or until onion is just tender. Add broccoli and cook, stirring frequently, 3 to 4 minutes, or until broccoli is crisp-tender.
- Add turkey, tomatoes, salt, pepper and Italian seasoning. Cook, stirring occasionally, until hot. Stir in pasta, cream and reserved pasta water. Sprinkle with Parmesan cheese.
- If desired, substitute fully-cooked ham cubes for smoked turkey. Smoked turkey is readily available in the deli section; purchase thick sliced deli-style smoked turkey and cut into cubes.
