Southern Style Pasta Salad

With corn, tomatoes, nuts and herbs, this fresh take on pasta salad will have your family coming back for seconds and thirds.

Ingredients

  • 16 oz Mueller's Elbows
  • 1 pkg (16 oz) frozen yellow sweet corn
  • 3 tomatoes, diced
  • 1/2 cup toasted pecan pieces
  • 1/4 cup apple cider vinegar or white wine vinegar
  • 1/3 cup olive oil or vegetable oil
  • 1/4 tsp garlic powder
  • 1/3 cup fresh minced basil leaves

Directions

  1. Cook pasta according to package directions. Drain and immediately place in a large bowl. While pasta is hot, stir in corn and blend until corn is thawed. Stir in tomatoes and pecans.
  2. Stir together vinegar, olive oil and garlic powder. Pour over salad and add basil leaves. Gently stir to blend.
  3. Tip: Toasting intensifies the flavor of the pecans. To toast nuts, spread them in a single layer on a baking sheet. Bake 5 to 7 minutes at 350°F or until toasted.
  4. Option: Omit basil and add 2 stalks celery, chopped.
