Spaghetti with Asparagus & Roma Tomatoes

This is a healthy dish that leaves the calories behind but not the flavor!

Ingredients

  • 1 lb. Mueller's Whole Grain Spaghetti
  • 1 lb. Fresh Asparagus Spears, trimmed at bottom and cut into thirds
  • 4 Roma Tomatoes , cut into a small dice (flesh only)
  • 6 Cloves of Garlic, minced
  • 1/4 Cup Light Olive Oil
  • Parmesan Cheese, freshly Grated 
  • Sea Salt & Crushed Red Pepper to taste

Directions

  • Prepare pot of water for boiling pasta by package directions.  Place a steamer or colander over the pot of water and steam asparagus until Al dente, about 5 to 7 minutes depending on the thickness.  Remove immediately, drain well and set aside.
  •  In a large sautee pan, pour olive oil and heat on medium heat.  Sautee Garlic until tender, about two minutes.
  • Add Asparagus to Garlic & Oil and toss in diced Roma Tomatoes.  Season with Sea Salt, Red Crushed Pepper, and fresh Grated Parmesan Cheese if desired.

    This recipe can be made with any of Mueller's Pasta Products.  A short cut pasta would be nice also, such as a Penne or Farfalle (Bow Tie).
