Ingredients

  • 12 oz Mueller's Fine Egg Noodles
  • 2 Tbsp vegetable oil
  • 1lb top sirloin, sliced into thin strips
  • 1 small onion, chopped
  • 1 pkg (8.5 oz) shredded cabbage coleslaw mix
  • 1 can (14.5 oz) beef broth
  • 1/3 cup Thai peanut sauce
  • Optional: 1/3 cup chopped salted cocktail peanuts, ¼ cup chopped fresh cilantro

Directions

  1. Heat oil over medium-high heat in large skillet. Add beef and brown well on both sides. Add onion and coleslaw mix and cook, stirring frequently until onion is tender.
  2. Add beef broth and noodles, bring to a simmer. Reduce heat to maintain simmer; cover and cook 2 minutes, stirring after each minute. Remove cover and continue to cook for 2 minutes, stirring frequently. Add Thai peanut sauce and stir gently to blend.
  3. Sprinkle with peanuts and cilantro if desired.
