Thai Beef and Noodles

Ingredients
- 12 oz Mueller's Fine Egg Noodles
- 2 Tbsp vegetable oil
- 1lb top sirloin, sliced into thin strips
- 1 small onion, chopped
- 1 pkg (8.5 oz) shredded cabbage coleslaw mix
- 1 can (14.5 oz) beef broth
- 1/3 cup Thai peanut sauce
- Optional: 1/3 cup chopped salted cocktail peanuts, ¼ cup chopped fresh cilantro
Directions
- Heat oil over medium-high heat in large skillet. Add beef and brown well on both sides. Add onion and coleslaw mix and cook, stirring frequently until onion is tender.
- Add beef broth and noodles, bring to a simmer. Reduce heat to maintain simmer; cover and cook 2 minutes, stirring after each minute. Remove cover and continue to cook for 2 minutes, stirring frequently. Add Thai peanut sauce and stir gently to blend.
- Sprinkle with peanuts and cilantro if desired.
