Tomato Blue Cheese Salad

Ingredients

16 oz Mueller’s® Mini Penne
2 cups halved cherry or grape tomatoes
1 cup small whole fresh basil leaves, lightly packed or 4 tbsp dried basil
1-1/2 cups finely crumbled blue cheese
4 tbsp olive oil
3 tbsp white wine vinegar
salt and pepper to taste

Directions

• Cook Mini Penne according to package directions.
• Drain, cover and set aside.
• In a bowl, toss tomatoes, basil leaves, cheese, oil and vinegar.
• Season to taste with salt and pepper.
• Refrigerate for 15-30 minutes.
• Toss refrigerated mixture with cooked pasta and let stand at room temperature for 15 minutes before serving.
