Turkey Vegetable Pasta

Ingredients
- 16 oz Mueller's Ziti
- 2 Tbsp olive oil
- 1 lb turkey breast cutlets, cut into thin strips about 1/4 x 2-inches
- 2 carrots, thinly sliced
- 1 cup sliced mushrooms (about 4 large button mushrooms, sliced)
- 1 small zucchini, halved and sliced
- 2 cloves garlic, minced
- 10 thin asparagus spears, trimmed and cut into 1-inch pieces (about 4 ounces asparagus)
- 1 jar (26 oz) garden vegetable pasta sauce
- 2 Tbsp minced basil or flat-leaf Italian parsley
- 2 Tbsp shredded Parmesan cheese
Directions
- Cook pasta according to package directions; drain.
- Heat oil in a large skillet. Add turkey strips and cook, stirring frequently, until turkey is lightly browned. Stir in carrots, mushrooms, zucchini and garlic and cook, stirring frequently 3 to 4 minutes or until vegetables are crisp tender. Stir in asparagus and cook, stirring frequently 1 minute. Stir in pasta sauce, reduce heat and simmer 10 minutes or until turkey is fully cooked.
- Stir in cooked pasta. Garnish with minced basil or parsley and shredded Parmesan cheese
