Turkey Vegetable Pasta

Ingredients

  • 16 oz Mueller's Ziti
  • 2 Tbsp olive oil
  • 1 lb turkey breast cutlets, cut into thin strips about 1/4 x 2-inches
  • 2 carrots, thinly sliced
  • 1 cup sliced mushrooms (about 4 large button mushrooms, sliced)
  • 1 small zucchini, halved and sliced
  • 2 cloves garlic, minced
  • 10 thin asparagus spears, trimmed and cut into 1-inch pieces (about 4 ounces asparagus)
  • 1 jar (26 oz) garden vegetable pasta sauce
  • 2 Tbsp minced basil or flat-leaf Italian parsley
  • 2 Tbsp shredded Parmesan cheese

Directions

  1. Cook pasta according to package directions; drain.
  2. Heat oil in a large skillet. Add turkey strips and cook, stirring frequently, until turkey is lightly browned. Stir in carrots, mushrooms, zucchini and garlic and cook, stirring frequently 3 to 4 minutes or until vegetables are crisp tender. Stir in asparagus and cook, stirring frequently 1 minute. Stir in pasta sauce, reduce heat and simmer 10 minutes or until turkey is fully cooked.
  3. Stir in cooked pasta. Garnish with minced basil or parsley and shredded Parmesan cheese
