Vegetable Harvest Spaghetti
Easy and quick to make, this pasta recipe includes tender vegetables in a delicious sauce to toss with spaghetti.

Ingredients
- 13.25 ounces Mueller's Whole Wheat Spaghetti
- 2 tablespoons olive oil
- 2 medium zucchini, sliced
- 2 cups fresh mushrooms, sliced
- 1 medium green bell pepper, seeded and cut into thin strips
- 1 (26 ounce) jar marinara sauce
- 1/4 cup shredded Parmesan cheese
Directions
- Cook pasta according to package directions.
- Heat oil in a large skillet over medium-high heat.
- Add zucchini, mushrooms and green pepper. Cook and stir until crisp-tender.
- Stir in marinara sauce. Bring to a boil.
- Reduce heat. Simmer for 15 minutes. Meanwhile, cook and drain the pasta according to package directions.
- Arrange on a warm platter. Top with vegetable mixture and Parmesan cheese. Serve immediately.
