Vegetable Harvest Spaghetti

Easy and quick to make, this pasta recipe includes tender vegetables in a delicious sauce to toss with spaghetti.



Mueller's Spaghetti

Serves 4

Ingredients
  • 13.25 ounces Mueller's Whole Wheat Spaghetti
  • 2 tablespoons olive oil
  • 2 medium zucchini, sliced
  • 2 cups fresh mushrooms, sliced
  • 1 medium green bell pepper, seeded and cut into thin strips
  • 1 (26 ounce) jar marinara sauce
  • 1/4 cup shredded Parmesan cheese
Directions
    1. Cook pasta according to package directions.
    2. Heat oil in a large skillet over medium-high heat.
    3. Add zucchini, mushrooms and green pepper. Cook and stir until crisp-tender.
    4. Stir in marinara sauce. Bring to a boil.
    5. Reduce heat. Simmer for 15 minutes. Meanwhile, cook and drain the pasta according to package directions.
    6. Arrange on a warm platter. Top with vegetable mixture and Parmesan cheese. Serve immediately.
