Vegetable Noodle Soup

Ingredients
16 oz Mueller’s® Old Fashioned Egg Noodles Fine6 quarts rich chicken broth
3 cups celery, cut small dice
3 cups onion, cut small dice
3 cups carrots, peeled and cut small dice
6 tomatoes, cored, seeded, and cut medium dice
4 tbsp fresh basil, chopped fine or 2 tbsp dry basil leaves
Salt and pepper to taste
Directions
• Cook Fine Egg Noodles according to package directions.• Drain, cover and set aside.
• Heat broth in a large soup pot, adding all ingredients except noodles.
• Bring to a simmer; simmer 8-10 minutes.
• Add cooked noodles just before serving.
• Yields 2-1/2 gallons.
