Pepperoni, mozzarella, and vegetables combine for an Italian-inspired pasta salad that's easy and quick to pull together.
12 ounces Mueller’s® Tri-Color Rotini
2-1/2 cups small broccoli florets
1 cup cubed mozzarella cheese
3/4 cup sliced pepperoni, halved
1/2 cup red or green bell pepper strips
1/3 cup red onion, thinly sliced
3/4 cup bottled Italian dressing
1Cook pasta according to package directions, adding broccoli to the boiling water for the last minute of cooking time. Drain, rinse well with cold water; drain again.
2In a large bowl, combine all ingredients, tossing together to distribute dressing.
3Serve immediately, or cover and refrigerate until ready to serve.
If you're refrigerating the salad until serving, be sure to toss it gently just prior to serving, adding a few splashes of dressing if needed.
